Ingredients

  • 🥔 2 potatoes (cut into 1/4-inch slices)
  • 🥬 2 cups kale (washed, dried, and shredded)
  • 🥛 ⅓ cup heavy whipping cream

Instructions

  1. Cook the bacon in a large pot or Dutch oven over medium heat until crispy, about 5-7 minutes. Remove and drain on paper towels.
  2. Add the smoked sausage to the same pot and cook over medium heat until browned, about 5-7 minutes.
  3. Add the chopped onion and cook until translucent, about 3-4 minutes. Then add minced garlic and stir for about a minute.
  4. Pour in the water and add the chicken soup base. Stir to combine, then add the sliced potatoes. Bring to a boil, then reduce heat and simmer for 15-20 minutes until potatoes are tender.
  5. Add the shredded kale and cook for about 5 minutes until wilted. Then pour in the heavy whipping cream and mix well.
  6. Crumble the cooked bacon and add it back into the soup. Season with salt and pepper to taste, stir, and serve hot.
