Ingredients
- 🌭 1 (16 ounce) package smoked sausage
- 🥓 6 slices bacon
- 🧅 ¾ cup chopped onion
- 🧄 1 ½ teaspoons minced garlic
- 💧 1 quart water
- 🍗 2 tablespoons chicken soup base
- 🥔 2 potatoes (cut into 1/4-inch slices)
- 🥬 2 cups kale (washed, dried, and shredded)
- 🥛 ⅓ cup heavy whipping cream
Instructions
- Cook the bacon in a large pot or Dutch oven over medium heat until crispy, about 5-7 minutes. Remove and drain on paper towels.
- Add the smoked sausage to the same pot and cook over medium heat until browned, about 5-7 minutes.
- Add the chopped onion and cook until translucent, about 3-4 minutes. Then add minced garlic and stir for about a minute.
- Pour in the water and add the chicken soup base. Stir to combine, then add the sliced potatoes. Bring to a boil, then reduce heat and simmer for 15-20 minutes until potatoes are tender.
- Add the shredded kale and cook for about 5 minutes until wilted. Then pour in the heavy whipping cream and mix well.
- Crumble the cooked bacon and add it back into the soup. Season with salt and pepper to taste, stir, and serve hot.
