Description

A cozy, layered bake featuring tender corned beef, tangy sauerkraut, and gooey Swiss cheese, all nestled between slices of hearty rye bread.


Ingredients

  • Corned beef: 1 lb, sliced
  • Sauerkraut: 2 cups, drained
  • Swiss cheese: 2 cups, shredded
  • Rye bread: 8 slices
  • Thousand Island dressing: 1 cup
  • Salt and pepper: to taste
  • Butter: 2 tablespoons (for greasing and topping)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Grease a 9×13 inch baking dish with butter.
  3. Layer half of the rye bread slices at the bottom of the baking dish.
  4. Spread half of the Thousand Island dressing over the bread.
  5. Layer half of the sliced corned beef evenly over the dressing.
  6. Spread half of the drained sauerkraut over the corned beef layer.
  7. Sprinkle half of the shredded Swiss cheese on top of the sauerkraut.
  8. Repeat the layering process with the remaining rye bread, Thousand Island dressing, corned beef, sauerkraut, and Swiss cheese.
  9. Drizzle melted butter over the top, cover with aluminum foil, and bake for 25 minutes.
  10. Remove the foil and bake for an additional 15-20 minutes until golden and bubbly.

Notes

  • For a spicier version, add spicy mustard or red pepper flakes.
  • For a milder flavor, skip the sauerkraut and add extra cheese.
  • Leftovers can be stored in an airtight container for 3-4 days in the refrigerator.
  • To reheat, cover with foil and bake at 350°F (175°C) for 20-25 minutes.
