Description
A cozy, layered bake featuring tender corned beef, tangy sauerkraut, and gooey Swiss cheese, all nestled between slices of hearty rye bread.
Ingredients
- Corned beef: 1 lb, sliced
- Sauerkraut: 2 cups, drained
- Swiss cheese: 2 cups, shredded
- Rye bread: 8 slices
- Thousand Island dressing: 1 cup
- Salt and pepper: to taste
- Butter: 2 tablespoons (for greasing and topping)
Instructions
- Preheat the oven to 350°F (175°C).
- Grease a 9×13 inch baking dish with butter.
- Layer half of the rye bread slices at the bottom of the baking dish.
- Spread half of the Thousand Island dressing over the bread.
- Layer half of the sliced corned beef evenly over the dressing.
- Spread half of the drained sauerkraut over the corned beef layer.
- Sprinkle half of the shredded Swiss cheese on top of the sauerkraut.
- Repeat the layering process with the remaining rye bread, Thousand Island dressing, corned beef, sauerkraut, and Swiss cheese.
- Drizzle melted butter over the top, cover with aluminum foil, and bake for 25 minutes.
- Remove the foil and bake for an additional 15-20 minutes until golden and bubbly.
Notes
- For a spicier version, add spicy mustard or red pepper flakes.
- For a milder flavor, skip the sauerkraut and add extra cheese.
- Leftovers can be stored in an airtight container for 3-4 days in the refrigerator.
- To reheat, cover with foil and bake at 350°F (175°C) for 20-25 minutes.
