Ingredients
- Beef Roast: 2 to 3 pounds (preferably ribeye or sirloin)
- Onions: 4 large, thinly sliced
- Beef Broth: 2 cups
- Fresh Thyme: 2 teaspoons (or 1 teaspoon dried thyme)
- Garlic: 4 cloves, minced
- Butter: 4 tablespoons
- Salt and Pepper: to taste
- Olive Oil: 2 tablespoons (for searing)
Instructions
- Preheat the oven to 325°F (160°C).
- Pat the beef roast dry and season generously with salt and pepper.
- Heat an oven-safe skillet over medium-high heat and add olive oil.
- Sear the beef roast for 4-5 minutes on each side until browned, then remove and set aside.
- In the same skillet, reduce heat to medium, add butter, and then the sliced onions with a pinch of salt.
- Sauté the onions for 20-25 minutes until caramelized, then add minced garlic and thyme.
- Pour in the beef broth, scraping the bottom of the skillet to release browned bits, and let it simmer.
- Return the seared beef roast to the skillet, cover, and transfer to the oven.
- Roast for 1.5 to 2 hours until the desired doneness is reached (135°F/57°C for medium-rare).
- Let the roast rest for 15 minutes before slicing and serving with the onion gravy.
Notes
- For added flavor, consider adding a splash of red wine to the gravy.
- Letting the gravy simmer after adding the broth enhances its richness.
- Use a meat thermometer to ensure perfect doneness.
