  • Garlic: 4 cloves, minced
  • Butter: 4 tablespoons
  • Salt and Pepper: to taste
  • Olive Oil: 2 tablespoons (for searing)

Instructions

  1. Preheat the oven to 325°F (160°C).
  2. Pat the beef roast dry and season generously with salt and pepper.
  3. Heat an oven-safe skillet over medium-high heat and add olive oil.
  4. Sear the beef roast for 4-5 minutes on each side until browned, then remove and set aside.
  5. In the same skillet, reduce heat to medium, add butter, and then the sliced onions with a pinch of salt.
  6. Sauté the onions for 20-25 minutes until caramelized, then add minced garlic and thyme.
  7. Pour in the beef broth, scraping the bottom of the skillet to release browned bits, and let it simmer.
  8. Return the seared beef roast to the skillet, cover, and transfer to the oven.
  9. Roast for 1.5 to 2 hours until the desired doneness is reached (135°F/57°C for medium-rare).
  10. Let the roast rest for 15 minutes before slicing and serving with the onion gravy.
