Ingredients

- 8 oz pasta
- 2 roasted red peppers, chopped
- 2 cloves garlic, minced
- 1/4 cup olive oil
- 1/4 cup grated Parmesan cheese
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/4 tsp red pepper flakes (optional)
- Fresh basil leaves for garnish
Instructions
- Cook pasta according to package instructions. Drain and set aside.
- In a pan, heat olive oil over medium heat. Add garlic and sauté for 1 minute.
- Add chopped roasted red peppers, salt, black pepper, and red pepper flakes. Cook for 3-4 minutes.
- Blend the mixture into a smooth sauce using a blender or food processor.
- Toss the cooked pasta with the sauce and Parmesan cheese.
- Garnish with fresh basil and serve.
Notes
- Use jarred roasted red peppers for convenience.
- Adjust spice level by reducing or omitting red pepper flakes.
- Add a splash of pasta water if the sauce is too thick.
