Ingredients

  • 2 salmon fillets (6 oz each)
  • 1/4 cup teriyaki sauce
  • 1 tbsp olive oil
  • 1 red bell pepper, sliced
  • 1 carrot, julienned
  • 1 cup broccoli florets
  • 1 clove garlic, minced
  • 1 tsp ginger, grated
  • 1 tbsp soy sauce
  • 1 tsp sesame oil
  • 1 tbsp sesame seeds (optional)

Instructions

  1. Marinate salmon fillets in teriyaki sauce for 15 minutes.
  2. Heat olive oil in a pan over medium heat. Cook salmon for 4 minutes per side until golden.
  3. Remove salmon and set aside. In the same pan, add garlic and ginger. Sauté for 30 seconds.
  4. Add bell pepper, carrot, and broccoli. Stir-fry for 4-5 minutes until tender.
  5. Drizzle soy sauce and sesame oil over vegetables. Toss to combine.
  6. Serve salmon over vegetables. Garnish with sesame seeds if desired.
