Description

Ingredients

  • Fresh salmon fillets: 4 pieces, about 6 oz each.
  • Spinach tortellini: 12 oz, either fresh or frozen.
  • Garlic: 3 cloves, minced.
  • Olive oil: 3 tablespoons.
  • Lemon juice: 2 tablespoons, freshly squeezed.
  • Cherry tomatoes: 1 cup, halved.
  • Parmesan cheese: 1/2 cup, grated.
  • Salt and pepper: to taste.

Instructions

  1. Start by boiling a large pot of salted water and add the spinach tortellini.
  2. While the tortellini is cooking, season the salmon fillets with salt and pepper.
  3. Heat 2 tablespoons of olive oil in a skillet and sear the salmon fillets skin-side down.
