Ingredients

Instructions
- Heat the olive oil in a large pot or Dutch oven over medium heat.
- Add the chopped onion, minced garlic, diced carrots, and chopped celery. Sauté for about 5-7 minutes.
- Stir in the bay leaf and dried thyme, then pour in the seafood stock and water. Bring to a gentle boil, then reduce heat and simmer for 15 minutes.
- Remove the bay leaf, then stir in the heavy cream and tomato paste.
- Add the shrimp and crab meat, season with salt, pepper, and paprika. Cook for an additional 5-7 minutes.
- If desired, use an immersion blender to puree the bisque to your preferred consistency.
- Ladle the bisque into wide bowls and garnish with fresh parsley and chives.
- Serve warm with crusty bread or crackers.
