  • Butter: 3 tablespoons, divided, or more as needed.
  • Fresh Thyme: 2 sprigs (optional).
  • Garlic: 2 cloves, crushed.
  • Shallot: 1, minced.
  • Beef Broth: 1/2 cup.

Instructions

  1. Take the beef chuck steaks out of the refrigerator and let them sit at room temperature for about 30 minutes. Season both sides with salt and pepper.
  2. Heat a large cast iron skillet on medium-high and add olive oil until it shimmers.
  3. Carefully place the seasoned steaks in the skillet and sear for about 4-5 minutes on one side.
  4. Flip the steaks, add butter, garlic, shallot, and thyme, and cook for another 4-5 minutes for medium-rare, basting with the juices.
  5. Check the internal temperature with a meat thermometer; it should read about 130°F (54°C) for medium-rare.
  6. Remove the steaks from the skillet, cover loosely with aluminum foil, and let them rest for 5-10 minutes.
  7. In the same skillet, add beef broth to deglaze, scraping up browned bits, and simmer for 2-3 minutes to reduce.
  8. Slice the steaks against the grain and drizzle the pan sauce over the top before serving.
