Instructions
- Take the beef chuck steaks out of the refrigerator and let them sit at room temperature for about 30 minutes. Season both sides with salt and pepper.
- Heat a large cast iron skillet on medium-high and add olive oil until it shimmers.
- Carefully place the seasoned steaks in the skillet and sear for about 4-5 minutes on one side.
- Flip the steaks, add butter, garlic, shallot, and thyme, and cook for another 4-5 minutes for medium-rare, basting with the juices.
- Check the internal temperature with a meat thermometer; it should read about 130°F (54°C) for medium-rare.
- Remove the steaks from the skillet, cover loosely with aluminum foil, and let them rest for 5-10 minutes.
- In the same skillet, add beef broth to deglaze, scraping up browned bits, and simmer for 2-3 minutes to reduce.
- Slice the steaks against the grain and drizzle the pan sauce over the top before serving.
