  • 🧄 Cloves garlic: 2, minced
  • 🌶️ Red bell pepper: 1, diced
  • 🌶️ Yellow bell pepper: 1, diced
  • 🍅 Can whole peeled tomatoes: 1 (28 ounces)
  • 🧂 Salt: 1/2 teaspoon
  • 🧀 Feta cheese: 4 ounces, crumbled
  • 🫒 Pitted Kalamata olives: 1/3 cup
  • 🥚 Large eggs: 4
  • 🌿 Cilantro: 1/4 bunch, for garnish

Instructions

  1. Heat the olive oil in a large skillet over medium heat.
  2. Sauté the diced onion until translucent, then add garlic and bell peppers.
  3. Add spices and cook for about 1 minute.
  4. Incorporate the whole peeled tomatoes and simmer for 10-15 minutes.
  5. Add feta cheese and Kalamata olives to the sauce.
