Description

A quick and easy shrimp fried rice recipe that’s perfect for a weeknight meal. Packed with flavor and ready in minutes.


Ingredients

  • 2 cups cooked rice (preferably day-old)
  • 1/2 lb shrimp, peeled and deveined
  • 2 eggs, beaten
  • 1/2 cup frozen peas and carrots
  • 2 cloves garlic, minced
  • 2 tbsp soy sauce
  • 1 tbsp oyster sauce
  • 1 tsp sesame oil
  • 2 tbsp vegetable oil
  • 2 green onions, chopped

Instructions

  1. Heat 1 tbsp vegetable oil in a large pan or wok over medium-high heat.
  2. Add shrimp and cook for 2-3 minutes until pink. Remove and set aside.
  3. Add remaining oil to the pan. Scramble the eggs until just set. Remove and set aside.
  4. Add garlic and frozen vegetables. Stir-fry for 2 minutes.
  5. Add rice, breaking up any clumps. Stir-fry for 3 minutes.
  6. Return shrimp and eggs to the pan. Add soy sauce, oyster sauce, and sesame oil.
  7. Toss everything together and cook for 1 more minute.
  8. Garnish with green onions and serve hot.

Notes

  • Use cold, day-old rice for best results.
  • You can substitute chicken or tofu for shrimp.
  • Adjust soy sauce to taste if you prefer less salt.
