- 300 grams (about 10.5 oz) of linguine
- 400 grams of shrimp
- 200 grams (about 7 oz) of fresh spinach
- 4 cloves of garlic
- 3 tablespoons of olive oil
- 100 grams of grated Parmesan cheese
- 2 tablespoons of freshly squeezed lemon juice
- Salt and pepper to taste
Instructions
- Wash and chop the spinach, and mince the garlic.
- Boil water in a large pot, add salt, and cook the linguine according to package instructions.
- In a large skillet, heat olive oil and sauté minced garlic until fragrant.
- Add shrimp to the skillet, season with salt and pepper, and cook until pink and opaque.
- Add fresh spinach to the skillet and sauté until wilted.
- Return the cooked linguine to the skillet, add lemon juice, and toss everything together.
- Add reserved pasta water gradually to achieve desired sauce consistency.
- Stir in grated Parmesan cheese and adjust seasoning if necessary.
- Plate the dish and garnish with extra Parmesan and a drizzle of olive oil.
