Ingredients

  • 400 grams of shrimp
  • 200 grams (about 7 oz) of fresh spinach
  • 4 cloves of garlic
  • 3 tablespoons of olive oil
  • 100 grams of grated Parmesan cheese
  • 2 tablespoons of freshly squeezed lemon juice
  • Salt and pepper to taste

Instructions

  1. Wash and chop the spinach, and mince the garlic.
  2. Boil water in a large pot, add salt, and cook the linguine according to package instructions.
  3. In a large skillet, heat olive oil and sauté minced garlic until fragrant.
  4. Add shrimp to the skillet, season with salt and pepper, and cook until pink and opaque.
  5. Add fresh spinach to the skillet and sauté until wilted.
  6. Return the cooked linguine to the skillet, add lemon juice, and toss everything together.
  7. Add reserved pasta water gradually to achieve desired sauce consistency.
  8. Stir in grated Parmesan cheese and adjust seasoning if necessary.
  9. Plate the dish and garnish with extra Parmesan and a drizzle of olive oil.
