Ingredients
- Chicken thighs: 1.5 kg (about 3-4 pounds), skinless and boneless
- Bacon: 200 g (about 7 oz), chopped
- Mushrooms: 250 g (about 9 oz), sliced
- Bell peppers: 2 medium (1 red and 1 green), sliced
- Onion: 1 large, diced
- Diced tomatoes: 1 can (400 g or 14 oz)
- Garlic: 4 cloves, minced
- Italian seasoning: 2 teaspoons
- Salt and pepper: to taste
- Olive oil: 1 tablespoon (for browning the bacon)
Instructions
- Prepare the chicken by rinsing and patting it dry, then season with salt and pepper.
- Sauté the bacon in a skillet until crispy, then remove and sauté the onion and garlic until translucent.
- Add mushrooms and bell peppers to the skillet and cook until softened.
- Layer the chicken in the slow cooker, sprinkle with Italian seasoning, and add the sautéed vegetables and diced tomatoes.
- Set the slow cooker to low for 6-8 hours or high for 3-4 hours.
