Ingredients
- π Chicken thighs β 4 pieces (bone-in, skin-on)

- π² Chicken broth β 2 cups
- π₯ Heavy cream β 1 cup
- π Rice β 1 cup (long-grain or jasmine)

- πΏ Paprika β 1 teaspoon
- πΏ Thyme β 1 teaspoon (dried or fresh)
- π’οΈ Olive oil β 2 tablespoons (for cooking)
Instructions
- Pat the chicken thighs dry and season with salt, pepper, paprika, and thyme.
- Rinse the rice under cold water, then cook it in a pot with 2 cups of water and a pinch of salt.
- Heat olive oil in a skillet and sear the chicken thighs skin-side down until golden brown.
- Add diced onion and bell pepper to the skillet, sautΓ© until softened, then add minced garlic.
- Pour in chicken broth and heavy cream, then return the chicken to the skillet and let it simmer.
- Cover and simmer for 25-30 minutes until the chicken is tender and cooked through.
Notes
- For a spicy version, add diced jalapeΓ±os or hot sauce.
- Brown rice can be used but requires longer cooking time.
- Let the dish cool before storing in the refrigerator for up to 3-4 days.
