Ingredients
- Ground beef: 1 lb (450 g)
- Breadcrumbs: 1 cup (100 g)
- Onion: 1 medium, finely chopped
- Garlic: 2 cloves, minced
- Egg: 1 large
- Ketchup: 1/2 cup (120 ml) plus extra for topping
- Worcestershire sauce: 2 tablespoons (30 ml)
- Potatoes: 2 large, peeled and cubed
- Cheddar cheese: 1 cup (100 g), shredded
- Milk: 1/2 cup (120 ml)
- Sweet corn: 1 cup (canned or frozen)
- Green beans: 1 cup (fresh or frozen)
- Butter: 2 tablespoons (30 g)
- Salt and pepper: to taste
Instructions
- In a large mixing bowl, combine ground beef, breadcrumbs, onion, garlic, egg, Worcestershire sauce, salt, and pepper. Mix until combined.
- Transfer the mixture to a loaf pan or shape it into a loaf on a baking sheet. Spread ketchup on top.
- Bake in a preheated oven for 1 hour.
- While the meatloaf is baking, boil cubed potatoes in salted water until tender, about 15-20 minutes.
- Drain the potatoes and return them to the pot. Add butter, milk, and cheddar cheese, then mash until creamy.
- In a small saucepan, heat sweet corn and green beans in boiling water for 5-7 minutes. Drain and season with salt and pepper.
- Slice the meatloaf and serve with cheesy mashed potatoes and sweet corn beans. Drizzle extra ketchup over the meatloaf if desired.

- Let the meatloaf rest for 10 minutes before slicing for better moisture retention.
