Ingredients

- 2 cups cooked chicken, chopped
- 1 cup romaine lettuce, chopped
- 1 cup cherry tomatoes, halved
- 1/2 cup black beans, rinsed and drained
- 1/2 cup corn kernels
- 1/4 cup red onion, diced
- 1/4 cup cilantro, chopped
- 1 avocado, diced
- 1/4 cup shredded cheddar cheese
- 1/4 cup tortilla strips
- 2 tbsp lime juice
- 2 tbsp olive oil
- 1 tsp cumin
- 1/2 tsp chili powder
- Salt and pepper to taste
Instructions
- In a large bowl, combine chicken, lettuce, tomatoes, black beans, corn, red onion, cilantro, and avocado.
- In a small bowl, whisk lime juice, olive oil, cumin, chili powder, salt, and pepper.
- Pour dressing over the salad and toss gently.
- Sprinkle cheese and tortilla strips on top.
- Serve immediately.

- Use rotisserie chicken for quick prep.
- Add jalapeños for extra heat.
