Ingredients

  • 2 cups cooked chicken, chopped
  • 1 cup romaine lettuce, chopped
  • 1 cup cherry tomatoes, halved
  • 1/2 cup black beans, rinsed and drained
  • 1/2 cup corn kernels
  • 1/4 cup red onion, diced
  • 1/4 cup cilantro, chopped
  • 1 avocado, diced
  • 1/4 cup shredded cheddar cheese
  • 1/4 cup tortilla strips
  • 2 tbsp lime juice
  • 2 tbsp olive oil
  • 1 tsp cumin
  • 1/2 tsp chili powder
  • Salt and pepper to taste

Instructions

  1. In a large bowl, combine chicken, lettuce, tomatoes, black beans, corn, red onion, cilantro, and avocado.
  2. In a small bowl, whisk lime juice, olive oil, cumin, chili powder, salt, and pepper.
  3. Pour dressing over the salad and toss gently.
  4. Sprinkle cheese and tortilla strips on top.
  5. Serve immediately.
