  • 4 cups vegetable broth

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add onion, garlic, bell pepper, and jalapeño. Sauté for 5 minutes.
  3. Stir in cumin and chili powder. Cook for 1 minute.
  4. Add soaked black beans and vegetable broth. Bring to a boil.
  5. Reduce heat, cover, and simmer for 45 minutes.
  6. Blend half the soup for a creamy texture if desired.
  7. Season with salt. Serve hot, garnished with cilantro.
