- 1 red bell pepper, diced
- 1 jalapeño, seeded and minced
- 1 tbsp olive oil
- 1 tsp cumin
- 1 tsp chili powder
- 4 cups vegetable broth
- Salt to taste
- Fresh cilantro for garnish
Instructions
- Heat olive oil in a large pot over medium heat.
- Add onion, garlic, bell pepper, and jalapeño. Sauté for 5 minutes.
- Stir in cumin and chili powder. Cook for 1 minute.
- Add soaked black beans and vegetable broth. Bring to a boil.
- Reduce heat, cover, and simmer for 45 minutes.
- Blend half the soup for a creamy texture if desired.
- Season with salt. Serve hot, garnished with cilantro.
