- 1 lb large shrimp, peeled and deveined
- 2 tbsp Cajun seasoning
- 1 tbsp olive oil
- 1 bell pepper, sliced
- 1 onion, sliced
- 2 cloves garlic, minced
- 1/2 cup chicken broth
- 1 tbsp lemon juice
- Salt and pepper to taste
Instructions
- Season shrimp with Cajun spice and set aside.
- Heat oil in a skillet over medium heat.
- Add bell pepper and onion, cook until softened.
- Add garlic and cook for 30 seconds.
- Push vegetables to the side and add shrimp.
- Cook shrimp for 2 minutes per side.
- Pour in chicken broth and lemon juice.
- Simmer for 2 minutes until shrimp is fully cooked.
- Season with salt and pepper.
- Serve hot.
