Description

A vibrant and flavorful salad featuring grilled chicken, fresh vegetables, and a spicy ranch dressing, perfect for any occasion.


Ingredients

  • 2 chicken breasts
  • 1/4 cup lime juice
  • 1 tsp lime zest
  • 1 tsp garlic powder
  • 1 tsp cumin
  • 1 tsp chili powder
  • 1 tsp salt
  • 1 tbsp honey
  • 2 tbsp avocado oil
  • 4 cups green leaf lettuce, chopped
  • 1 cup diced tomatoes
  • 1 can black beans, drained
  • 1 red bell pepper, sliced
  • 1 avocado, sliced
  • 1 cup corn (fresh, frozen, or canned)
  • 1/2 red onion, sliced
  • 1 cup tortilla strips
  • 1/4 cup fresh cilantro, chopped
  • Lime wedges for serving
  • 1/2 cup ranch dressing
  • 24 tbsp hot sauce (to taste)

Instructions

  1. Prepare the chicken marinade by combining lime juice, lime zest, garlic powder, cumin, chili powder, salt, honey, and avocado oil in a mixing bowl.
  2. Marinate the chicken by placing it in a resealable bag with the marinade and refrigerating for at least 30 minutes.
  3. Cook the marinated chicken on a grill or skillet over medium-high heat for 6-7 minutes on each side until fully cooked.
  4. Prepare the spicy ranch dressing by mixing ranch dressing and hot sauce in a small bowl.
  5. Assemble the salad by combining lettuce, tomatoes, black beans, bell pepper, avocado, corn, and red onion in a large bowl.
  6. Add the sliced grilled chicken on top of the salad mixture.
  7. Drizzle the spicy ranch dressing over the salad and toss gently to combine.
  8. Garnish with tortilla strips and cilantro, and serve with lime wedges.

Notes

  • For a vegetarian option, substitute chicken with grilled tofu or chickpeas.
  • Adjust the spice level by adding more or less hot sauce to the dressing.
  • Store leftovers in an airtight container for up to two days.
