Ingredients

- 2 tbsp feta cheese, crumbled

- Salt and pepper to taste
Instructions
- Heat olive oil in a non-stick pan over medium heat.
- Whisk eggs in a bowl and season with salt and pepper.
- Pour eggs into the pan and let them set slightly.
- Add spinach and feta cheese to one half of the omelette.
- Fold the other half over the filling and cook for another minute.
- Slide onto a plate and serve hot.
