Description

A Spinach Frittata is a delightful dish that combines eggs with fresh spinach and other ingredients, similar to an omelet but thicker and baked in the oven. It’s nutritious and versatile for any meal.


Ingredients

  • Large eggs: 9 eggs
  • Milk: 2 tablespoons
  • Grated Parmesan cheese: 1/3 cup
  • Salt: 1/4 teaspoon
  • Freshly ground pepper: 1/8 teaspoon
  • Extra virgin olive oil: 2 tablespoons
  • Chopped onion: 1 medium onion
  • Minced garlic: 1 large clove
  • Fresh chopped spinach: 8 ounces
  • Chopped sun-dried tomatoes: 2 tablespoons (optional)
  • Goat cheese: 2 ounces (optional)
  • Fresh herbs: (optional)
  • Other vegetables: (optional)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large mixing bowl, whisk together 9 large eggs, 2 tablespoons of milk, 1/3 cup of grated Parmesan cheese, 1/4 teaspoon of salt, and 1/8 teaspoon of freshly ground pepper.
  3. In an oven-safe skillet, heat 2 tablespoons of extra virgin olive oil over medium heat. Sauté 1 chopped medium onion for 3-4 minutes until translucent, then add 1 minced garlic clove and cook for an additional minute.
  4. Add 8 ounces of fresh chopped spinach to the skillet and cook for 2-3 minutes until wilted. If using, stir in 2 tablespoons of chopped sun-dried tomatoes.
  5. Pour the egg mixture over the sautéed vegetables and gently stir to combine. Crumble 2 ounces of goat cheese on top.
  6. Cook on the stovetop for 2-3 minutes until the edges start to set.
  7. Transfer the skillet to the preheated oven and bake for 15-20 minutes until puffed and golden brown.
  8. Remove from the oven, let cool for a few minutes, then slice and serve warm or at room temperature.
