Ingredients
- Large eggs: 9 eggs
- Milk: 2 tablespoons
- Grated Parmesan cheese: 1/3 cup
- Salt: 1/4 teaspoon
- Freshly ground pepper: 1/8 teaspoon
- Extra virgin olive oil: 2 tablespoons
- Chopped onion: 1 medium onion
- Minced garlic: 1 large clove
- Fresh chopped spinach: 8 ounces
- Chopped sun-dried tomatoes: 2 tablespoons (optional)
- Goat cheese: 2 ounces (optional)
- Fresh herbs: (optional)

Instructions
- Preheat your oven to 375°F (190°C).
- In a large mixing bowl, whisk together 9 large eggs, 2 tablespoons of milk, 1/3 cup of grated Parmesan cheese, 1/4 teaspoon of salt, and 1/8 teaspoon of freshly ground pepper.
- In an oven-safe skillet, heat 2 tablespoons of extra virgin olive oil over medium heat. Sauté 1 chopped medium onion for 3-4 minutes until translucent, then add 1 minced garlic clove and cook for an additional minute.
- Add 8 ounces of fresh chopped spinach to the skillet and cook for 2-3 minutes until wilted. If using, stir in 2 tablespoons of chopped sun-dried tomatoes.
- Pour the egg mixture over the sautéed vegetables and gently stir to combine. Crumble 2 ounces of goat cheese on top.
- Cook on the stovetop for 2-3 minutes until the edges start to set.
- Transfer the skillet to the preheated oven and bake for 15-20 minutes until puffed and golden brown.
- Remove from the oven, let cool for a few minutes, then slice and serve warm or at room temperature.
