Delicious Starbucks Copycat Birthday Cake Pops that are soft, moist, and covered in a sweet candy coating, perfect for any celebration.
Ingredients

- 1 box vanilla cake mix (about 15.25 oz)
- ⅓ cup neutral oil (such as vegetable or canola oil)
- 1 cup milk or water
- 4 large eggs
- ¼ cup unsalted butter, softened
- 1 cup powdered sugar
- 1 teaspoon vanilla extract
- Pinch of salt
- 1 teaspoon milk (for the frosting)
- 12 oz candy melts (white or any color of your choice)
- White nonpareils or sprinkles (for decoration)
Instructions
- Preheat your oven to 350°F (175°C).
- In a large mixing bowl, combine the vanilla cake mix, neutral oil, milk (or water), and eggs. Mix until smooth.
- Pour the batter into a greased 9×13 inch baking pan and bake for 25-30 minutes.
- Let the cake cool completely in the pan on a wire rack.
- Crumble the cooled cake into fine crumbs in a large mixing bowl.
- In a separate bowl, beat together the softened butter, powdered sugar, vanilla extract, and a pinch of salt until smooth. Adjust consistency with milk if needed.
- Add the frosting to the crumbled cake mixture and mix until well combined.
- Roll about 1 tablespoon of the mixture into balls and place on a baking sheet lined with parchment paper.
- Chill the cake balls in the refrigerator for about 30 minutes.
- Melt the candy melts in a microwave-safe bowl according to package instructions.
- Dip the tip of a lollipop stick into the melted candy melts and insert it into each cake ball.
- Dip each cake pop into the melted candy melts, tapping off excess.
- While the coating is still wet, add sprinkles on top.
- Place the cake pops upright in a styrofoam block or cake pop stand to set.
- Once the coating has hardened, serve and enjoy!
