- 1 heaped tbsp icing sugar (for frosting)
- 100g cream cheese (for frosting)
- Fresh strawberries (chopped, for topping)
- Strawberry jam (for topping)
- Biscuit crumbs (for topping)
Instructions
- Preheat your oven to 180°C (350°F) and line a baking sheet with parchment paper.
- Cream the room temperature salted butter, light brown sugar, and granulated sugar until light and fluffy.
- Add the vanilla extract, large egg, and double cream to the mixture and beat until well combined.
- In a separate bowl, whisk together the plain flour, baking powder, and baking soda, then gradually add to the wet ingredients.
- Portion out the cookie dough, roll into balls, and coat in granulated sugar.
- Place the cookie dough balls on the baking sheet, spacing them apart, and bake for 10-12 minutes.
- While the cookies cool, whip the double cream until soft peaks form, then fold in the cream cheese, vanilla extract, and icing sugar.
- Spread the whipped cream cheese frosting on top of each cooled cookie.
- Top with chopped fresh strawberries, a swirl of strawberry jam, and biscuit crumbs.
