Description

Strawberry Cheesecake Cookies are a delightful treat that combines the creamy flavor of cheesecake with the sweetness of strawberries, all in a soft, chewy cookie topped with cream cheese frosting.


Ingredients

  • 100g light brown sugar
  • 50g granulated sugar
  • 1 tsp vanilla extract
  • 1 large egg (room temperature)
  • 1 tsp double cream
  • 220g plain flour
  • 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 30g granulated sugar (for coating)
  • 100ml double cream (for frosting)
  • 1/2 tsp vanilla extract (for frosting)
  • 1 heaped tbsp icing sugar (for frosting)
  • 100g cream cheese (for frosting)
  • Fresh strawberries (chopped, for topping)
  • Strawberry jam (for topping)
  • Biscuit crumbs (for topping)

Instructions

  1. Preheat your oven to 180°C (350°F) and line a baking sheet with parchment paper.
  2. Cream the room temperature salted butter, light brown sugar, and granulated sugar until light and fluffy.
  3. Add the vanilla extract, large egg, and double cream to the mixture and beat until well combined.
  4. In a separate bowl, whisk together the plain flour, baking powder, and baking soda, then gradually add to the wet ingredients.
  5. Portion out the cookie dough, roll into balls, and coat in granulated sugar.
  6. Place the cookie dough balls on the baking sheet, spacing them apart, and bake for 10-12 minutes.
  7. While the cookies cool, whip the double cream until soft peaks form, then fold in the cream cheese, vanilla extract, and icing sugar.
  8. Spread the whipped cream cheese frosting on top of each cooled cookie.
  9. Top with chopped fresh strawberries, a swirl of strawberry jam, and biscuit crumbs.
