- 1 cup fresh strawberries, finely chopped
- 8 oz cream cheese, softened
- 1/4 cup powdered sugar
- 1 tsp vanilla extract
- 1 1/2 cups crushed graham crackers
- 12 oz dark or white chocolate, melted
- 1 tbsp coconut oil (optional, for smoother chocolate coating)
Instructions
- Mix cream cheese, powdered sugar, and vanilla in a bowl until smooth.
- Add chopped strawberries and graham crackers, then stir until combined.
- Roll the mixture into small balls (about 1-inch diameter) and place them on a lined baking sheet.
- Freeze the balls for 30 minutes to firm up.
- Melt chocolate with coconut oil (if using) in a microwave-safe bowl, stirring every 30 seconds.
- Dip each cheesecake ball into the melted chocolate, coating evenly.
- Place back on the baking sheet and let the chocolate set at room temperature or in the fridge.
- Serve chilled.
Notes
- Use ripe strawberries for the best flavor.
- If the mixture is too soft, chill for 15 minutes before rolling.
- Store leftovers in the fridge for up to 5 days.
