Ingredients

- 🍬 Sugar: 3/4 cup (150g)
- 🥄 Baking powder: 2 teaspoons
- 🥚 Eggs: 2 large
- 🍦 Vanilla extract: 1 teaspoon
- 🧂 Salt: 1/2 teaspoon
Instructions
- Preheat your oven to 375°F (190°C).
- Prepare the muffin tin by lining it with paper liners or greasing it.
- In a large mixing bowl, whisk together the all-purpose flour, baking powder, and salt.
- In another bowl, beat the eggs and then add the Greek yogurt, sugar, and vanilla extract, mixing until smooth.
- Gently fold in the diced strawberries into the wet mixture.
- Fill the muffin tins with the batter, about 2/3 full.
- Bake in the preheated oven for 18-22 minutes.
- Let the muffins cool in the tin for 5 minutes before transferring them to a wire rack to cool completely.
