Ingredients

  • 16 oz cream cheese, softened
  • 1 cup sugar
  • 1 tsp vanilla extract
  • 2 eggs
  • 1 cup sour cream
  • 2 cups fresh strawberries, sliced
  • 1/2 cup whipped cream

Instructions

  1. Preheat oven to 325°F (165°C).
  2. Mix graham cracker crumbs, melted butter, and 1/4 cup sugar. Press into the bottom of a 9-inch springform pan.
  3. Bake crust for 10 minutes, then let cool.
  4. Beat cream cheese, 1 cup sugar, and vanilla until smooth.
  5. Add eggs one at a time, mixing well after each.
  6. Stir in sour cream until blended.
  7. Pour filling over crust and bake for 45 minutes.
  8. Let cheesecake cool, then refrigerate for at least 4 hours.
  9. Top with sliced strawberries and whipped cream before serving.
