Ingredients

- 2 cups graham cracker crumbs
- 1/2 cup melted butter
- 1/4 cup sugar
- 16 oz cream cheese, softened
- 1 cup sugar
- 1 tsp vanilla extract
- 2 eggs
- 1 cup sour cream
- 2 cups fresh strawberries, sliced
- 1/2 cup whipped cream
Instructions
- Preheat oven to 325°F (165°C).
- Mix graham cracker crumbs, melted butter, and 1/4 cup sugar. Press into the bottom of a 9-inch springform pan.
- Bake crust for 10 minutes, then let cool.
- Beat cream cheese, 1 cup sugar, and vanilla until smooth.
- Add eggs one at a time, mixing well after each.
- Stir in sour cream until blended.
- Pour filling over crust and bake for 45 minutes.
- Let cheesecake cool, then refrigerate for at least 4 hours.
- Top with sliced strawberries and whipped cream before serving.
Notes
- For best results, use room-temperature cream cheese.
- Chill cheesecake overnight for a firmer texture.
- Fresh strawberries work best, but you can use thawed frozen strawberries if needed.
