Ingredients
- Salmon fillets: 4 pieces (6 ounces each)
- Olive oil: 2 tablespoons
- Baby spinach: 3 cups
- Italian seasoning: 1 teaspoon
- Paprika: 1/2 teaspoon
- Cayenne pepper: a pinch
- Feta cheese: approximately 5.3 ounces (crumbled)
- Parmesan cheese: 1/4 cup (grated)
- Jarred roasted red peppers: 1/4 cup (chopped)
- Salt and pepper: to taste
Instructions
- Preheat your oven to 375°F (190°C).
- In a large skillet, heat 1 tablespoon of olive oil over medium heat and sauté the baby spinach for about 2-3 minutes until it wilts down.
- In a mixing bowl, combine the sautéed spinach with crumbled feta cheese, grated parmesan cheese, chopped roasted red peppers, Italian seasoning, paprika, cayenne pepper, and salt and pepper to taste.
- Pat the salmon fillets dry with paper towels and slice a pocket into the side of each fillet.
- Spoon the spinach and feta mixture into each salmon pocket, dividing the filling evenly among the fillets.
- In the same skillet, heat the remaining tablespoon of olive oil over medium-high heat and sear the stuffed salmon fillets skin-side down for about 3-4 minutes.
- Transfer the skillet to the preheated oven and bake the salmon for an additional 10-12 minutes.
- Remove the salmon from the oven and let it rest for a couple of minutes before serving.
