Ingredients

  • Beef short ribs: 2 lbs (about 900 g)
  • Cola: 1 cup (about 240 ml)
  • Beef broth: 2 cups (about 480 ml)
  • Onion: 1 large, diced
  • Garlic: 4 cloves, minced
  • Fresh thyme: 2 teaspoons (or 1 teaspoon dried thyme)
  • Salt and pepper: to taste
  • Arborio rice: 1 cup (about 200 g)
  • Chicken broth: 4 cups (about 960 ml)
  • Parmesan cheese: 1 cup, grated
  • Butter: 2 tablespoons

Instructions

  1. Season the beef short ribs generously with salt and pepper. Sear the short ribs on all sides in a skillet until browned, about 3-4 minutes per side. Remove and set aside.
  2. Sauté the diced onion in the same skillet until translucent, about 5 minutes. Add minced garlic and thyme, cooking for an additional minute.
  3. Deglaze the pan with cola, scraping the bottom to release browned bits. Simmer for a couple of minutes.
  4. Return the short ribs to the skillet, add beef broth, and bring to a gentle simmer. Cover and cook for about 3 hours until tender.
  5. While the ribs cook, heat chicken broth in a separate pot. In a saucepan, melt 1 tablespoon of butter, add Arborio rice, and toast for 2 minutes.
  6. Add warm chicken broth to the rice one ladle at a time, stirring frequently for about 18-20 minutes until creamy.
  7. Once the risotto is creamy and al dente, stir in grated Parmesan cheese and remaining butter. Season with salt and pepper.
  8. Serve the risotto topped with short ribs and spoon some cooking liquid over the top.
