Ingredients
- Beef short ribs: 2 lbs (about 900 g)
- Cola: 1 cup (about 240 ml)
- Beef broth: 2 cups (about 480 ml)
- Onion: 1 large, diced
- Garlic: 4 cloves, minced
- Fresh thyme: 2 teaspoons (or 1 teaspoon dried thyme)
- Salt and pepper: to taste
- Arborio rice: 1 cup (about 200 g)
- Chicken broth: 4 cups (about 960 ml)
- Parmesan cheese: 1 cup, grated
- Butter: 2 tablespoons
Instructions
- Season the beef short ribs generously with salt and pepper. Sear the short ribs on all sides in a skillet until browned, about 3-4 minutes per side. Remove and set aside.
- Sauté the diced onion in the same skillet until translucent, about 5 minutes. Add minced garlic and thyme, cooking for an additional minute.
- Deglaze the pan with cola, scraping the bottom to release browned bits. Simmer for a couple of minutes.
- Return the short ribs to the skillet, add beef broth, and bring to a gentle simmer. Cover and cook for about 3 hours until tender.
- While the ribs cook, heat chicken broth in a separate pot. In a saucepan, melt 1 tablespoon of butter, add Arborio rice, and toast for 2 minutes.
- Add warm chicken broth to the rice one ladle at a time, stirring frequently for about 18-20 minutes until creamy.
- Once the risotto is creamy and al dente, stir in grated Parmesan cheese and remaining butter. Season with salt and pepper.
- Serve the risotto topped with short ribs and spoon some cooking liquid over the top.
