Ingredients

- Espresso: 1/2 cup (strongly brewed and cooled)
- Ladyfinger cookies: 1 cup (about 100g, crushed)
- Sugar: 1/4 cup (50g)
- Vanilla extract: 1 teaspoon
- Dark chocolate: 8 oz (about 225g, for coating)
- Cocoa powder: 1/4 cup (for dusting)
Instructions
- Prepare the coffee mixture by brewing a strong cup of espresso and letting it cool to room temperature.
- Make the mascarpone filling by combining mascarpone cheese, cooled espresso, crushed ladyfinger cookies, sugar, and vanilla extract in a bowl.
- Cover the mixture and refrigerate for about an hour to firm it up.
- Shape the truffles by scooping out portions of the mixture and rolling them into balls.
- Chill the shaped truffles for another 30 minutes.
- Melt the dark chocolate and dip each truffle into it, then dust with cocoa powder before letting them set.
