Ingredients

  • Espresso: 1/2 cup (strongly brewed and cooled)
  • Ladyfinger cookies: 1 cup (about 100g, crushed)
  • Sugar: 1/4 cup (50g)
  • Vanilla extract: 1 teaspoon
  • Dark chocolate: 8 oz (about 225g, for coating)
  • Cocoa powder: 1/4 cup (for dusting)

Instructions

  1. Prepare the coffee mixture by brewing a strong cup of espresso and letting it cool to room temperature.
  2. Make the mascarpone filling by combining mascarpone cheese, cooled espresso, crushed ladyfinger cookies, sugar, and vanilla extract in a bowl.
  3. Cover the mixture and refrigerate for about an hour to firm it up.
  4. Shape the truffles by scooping out portions of the mixture and rolling them into balls.
  5. Chill the shaped truffles for another 30 minutes.
  6. Melt the dark chocolate and dip each truffle into it, then dust with cocoa powder before letting them set.
