Ingredients

  • Mascarpone cheese – 1 cup (about 240g)
  • Ladyfinger cookies – 1 cup, crushed (about 100g)
  • Espresso – 1/2 cup, cooled (about 120ml)
  • Cocoa powder – 1/4 cup (for dusting)
  • Dark chocolate – 8 oz (about 225g), chopped
  • Sugar – 1/4 cup (about 50g)
  • Vanilla extract – 1 teaspoon

Instructions

  1. Brew a strong cup of espresso and let it cool to room temperature.
  2. In a large mixing bowl, combine mascarpone cheese, crushed ladyfinger cookies, cooled espresso, sugar, and vanilla extract. Mix until smooth.
  3. Cover the mixture with plastic wrap and refrigerate for about an hour to firm up.
  4. Using a cookie scoop, form small balls of the mixture and place them on a parchment-lined baking sheet.
  5. Melt the dark chocolate in a microwave-safe bowl, stirring every 30 seconds until smooth.
  6. Dip each truffle into the melted chocolate and place back on the baking sheet.
  7. Dust each truffle with cocoa powder and refrigerate for about 30 minutes to set the chocolate.
