Delicious gluten-free and dairy-free muffins with tropical mango and coconut flavors.


Ingredients

  • 1 cup gluten-free flour blend
  • 1/2 cup shredded coconut
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 1/2 cup coconut milk
  • 1/4 cup coconut oil, melted
  • 1/4 cup maple syrup
  • 1 tsp vanilla extract
  • 1 cup diced mango

Instructions

  1. Preheat oven to 350°F (175°C). Line a muffin tin with paper liners.
  2. In a bowl, mix gluten-free flour, shredded coconut, baking powder, and salt.
  3. In another bowl, whisk coconut milk, coconut oil, maple syrup, and vanilla extract.
  4. Combine wet and dry ingredients. Fold in diced mango.
  5. Spoon batter into muffin cups, filling each 3/4 full.
  6. Bake for 20-25 minutes or until a toothpick comes out clean.
  7. Cool for 5 minutes before serving.
