Ingredients

  • Turkey broth: 6 cups
  • Lemongrass: 2 stalks, bruised and sliced

  • Makrut lime leaves: 2 leaves, thinly sliced
  • Red pepper flakes: ½ teaspoon, or more to taste
  • Cooked turkey: 1 pound, cut into small cubes
  • Clamshell mushrooms: 1 cup, separated
  • Fish sauce: 2 tablespoons
  • Palm sugar: 2 teaspoons
  • Coconut milk: 1 can (13 ounces)
  • Lime juice: ¼ cup
  • Green onions: ¼ cup, chopped
  • Cilantro leaves: 2 tablespoons, chopped
  • Chili oil: ¼ teaspoon, or more to taste

Instructions

  1. Prepare the turkey broth by bringing 6 cups to a gentle simmer in a large pot.
  2. Add the bruised lemongrass, sliced ginger, chopped cilantro stems, and makrut lime leaves to the pot and let simmer for 10-15 minutes.
  3. Stir in the red pepper flakes, fish sauce, and palm sugar, adjusting seasoning to taste.
  4. Gently add the cooked turkey cubes and clamshell mushrooms, heating through for 5-7 minutes.
  5. Pour in the coconut milk and stir well, simmering for an additional 5 minutes.
  6. Remove from heat and stir in the lime juice.
