Ingredients

- Cilantro stems: 2 tablespoons, chopped
- Makrut lime leaves: 2 leaves, thinly sliced
- Red pepper flakes: ½ teaspoon, or more to taste
- Cooked turkey: 1 pound, cut into small cubes
- Clamshell mushrooms: 1 cup, separated
- Fish sauce: 2 tablespoons
- Palm sugar: 2 teaspoons
- Coconut milk: 1 can (13 ounces)
- Lime juice: ¼ cup
- Green onions: ¼ cup, chopped
- Cilantro leaves: 2 tablespoons, chopped
- Chili oil: ¼ teaspoon, or more to taste
Instructions
- Prepare the turkey broth by bringing 6 cups to a gentle simmer in a large pot.
- Add the bruised lemongrass, sliced ginger, chopped cilantro stems, and makrut lime leaves to the pot and let simmer for 10-15 minutes.
- Stir in the red pepper flakes, fish sauce, and palm sugar, adjusting seasoning to taste.
- Gently add the cooked turkey cubes and clamshell mushrooms, heating through for 5-7 minutes.
- Pour in the coconut milk and stir well, simmering for an additional 5 minutes.
- Remove from heat and stir in the lime juice.
- Ladle the soup into bowls and garnish with chopped green onions and fresh cilantro leaves, adding chili oil if desired.
