A delicious and healthy vegan alternative to chicken salad made with chickpeas.
Ingredients
Scale
- 1 can chickpeas, drained and rinsed
- 1/4 cup vegan mayonnaise
- 1 tbsp lemon juice
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- 1/4 cup diced celery
- 1/4 cup diced red onion
- Salt and pepper to taste
Instructions
- Mash chickpeas in a bowl with a fork or potato masher
- Add mayonnaise, lemon juice, garlic powder, and onion powder
- Mix well until combined
- Stir in celery and red onion
- Season with salt and pepper
- Serve on bread or with crackers
Notes
- Store leftovers in refrigerator for up to 3 days
- Adjust seasonings to taste
