Description

A delicious and healthy vegan alternative to chicken salad made with chickpeas.


Ingredients

  • 1 can chickpeas, drained and rinsed
  • 1/4 cup vegan mayonnaise
  • 1 tbsp lemon juice
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/4 cup diced celery
  • 1/4 cup diced red onion
  • Salt and pepper to taste

Instructions

  1. Mash chickpeas in a bowl with a fork or potato masher
  2. Add mayonnaise, lemon juice, garlic powder, and onion powder
  3. Mix well until combined
  4. Stir in celery and red onion
  5. Season with salt and pepper
  6. Serve on bread or with crackers
