Ingredients

  • 200g dark chocolate (70% cocoa)
  • 100ml heavy cream
  • 30g unsalted butter
  • 2 tbsp whiskey
  • 50g caramel sauce
  • 50g cocoa powder (for dusting)

Instructions

  1. Chop the dark chocolate into small pieces and place in a heatproof bowl.
  2. Heat the heavy cream and butter in a saucepan until just boiling.
  3. Pour the hot cream mixture over the chocolate and whisk until smooth.
  4. Stir in the whiskey and caramel sauce.
  5. Cover and refrigerate for at least 2 hours until firm.
  6. Scoop small portions and roll into balls.
  7. Coat each truffle in cocoa powder.
  8. Chill again for 30 minutes before serving.
