- 2 cups graham cracker crumbs
- 1/2 cup melted butter
- 24 oz cream cheese, softened
- 1 cup sugar
- 3 eggs
- 1 tsp vanilla extract
- 1 cup white chocolate chips, melted
- 2 tbsp instant coffee granules
- 1/4 cup hot water
- 1 cup heavy whipping cream
Instructions
- Preheat oven to 325°F (165°C).
- Mix graham cracker crumbs and melted butter. Press into the bottom of a 9-inch springform pan.
- Beat cream cheese and sugar until smooth. Add eggs one at a time, then vanilla.
- Dissolve coffee in hot water and mix into the cream cheese batter.
- Fold in melted white chocolate.
- Pour batter over the crust and bake for 45-50 minutes until set.
- Let cool, then refrigerate for at least 4 hours.
- Whip heavy cream and spread over the cheesecake before serving.
