Ingredients

  • 🍗 Grilled chicken breast – 2 pieces (about 500g)
  • 🌾 Cauliflower rice – 2 cups (fresh or frozen)
  • 🍅 Cherry tomatoes – 1 cup, halved
  • 🥑 Avocado – 1 ripe, sliced
  • 🍯 Homemade BBQ sauce – 1/2 cup
  • 🌿 Cilantro – 1/4 cup, chopped (for garnish)
  • 🧂 Salt and pepper – to taste
  • 🛢️ Olive oil – 1 tablespoon (for cooking)

Instructions

  1. Marinate the chicken breasts with salt, pepper, and a bit of BBQ sauce for at least 15 minutes.
  2. Preheat the grill or grill pan over medium-high heat and grill the chicken for 6-7 minutes on each side, brushing with more BBQ sauce.
  3. While the chicken rests, heat olive oil in a skillet and sauté the cauliflower rice with salt and pepper for 5-7 minutes until tender.
