Ingredients
Grilled chicken breast – 2 pieces (about 500g)
Cauliflower rice – 2 cups (fresh or frozen)
Cherry tomatoes – 1 cup, halved
Avocado – 1 ripe, sliced
Homemade BBQ sauce – 1/2 cup
Cilantro – 1/4 cup, chopped (for garnish)
Salt and pepper – to taste
Olive oil – 1 tablespoon (for cooking)
Instructions
- Marinate the chicken breasts with salt, pepper, and a bit of BBQ sauce for at least 15 minutes.
- Preheat the grill or grill pan over medium-high heat and grill the chicken for 6-7 minutes on each side, brushing with more BBQ sauce.
- While the chicken rests, heat olive oil in a skillet and sauté the cauliflower rice with salt and pepper for 5-7 minutes until tender.
- Slice the grilled chicken and prepare the cherry tomatoes and avocado.
- Assemble the bowl with cauliflower rice as the base, topped with sliced chicken, cherry tomatoes, avocado, and a drizzle of BBQ sauce. Garnish with cilantro.
