A flavorful dish featuring za’atar-spiced roasted chicken with crispy chickpeas.
Ingredients

- 1 whole chicken (3–4 lbs)
- 2 tbsp za’atar
- 1 tsp salt
- 1 tsp black pepper
- 2 tbsp olive oil
- 1 can (15 oz) chickpeas, drained and rinsed
- 1 lemon, sliced
- 4 garlic cloves, minced
Instructions
- Preheat oven to 400°F (200°C).
- Rub chicken with olive oil, za’atar, salt, and pepper.
- Place lemon slices and minced garlic inside the chicken cavity.
- Spread chickpeas in a roasting pan and place chicken on top.
- Roast for 1 hour or until internal temperature reaches 165°F (74°C).
- Let rest for 10 minutes before carving.
Notes
- Use fresh za’atar for the best flavor.
- For crispier chickpeas, toss them in oil before roasting.
- Adjust seasoning to your taste.
