Ingredients

  • 1/4 cup vegetable oil
  • 1/2 cup sugar
  • 1 egg
  • 1 1/2 cups all-purpose flour
  • 1/2 tsp baking soda
  • 1/4 tsp baking powder
  • 1/4 tsp salt
  • 1 tsp cinnamon

Instructions

  1. Preheat oven to 350°F (175°C). Grease a muffin tin.
  2. In a bowl, mix grated zucchini, oil, sugar, and egg.
  3. In another bowl, combine flour, baking soda, baking powder, salt, and cinnamon.
  4. Add dry ingredients to wet ingredients. Stir until just combined.
  5. Fill muffin cups 2/3 full. Bake for 20-25 minutes or until a toothpick comes out clean.
  6. Cool for 5 minutes before serving.
