Ingredients

- 1 1/2 cups grated zucchini
- 1/4 cup vegetable oil
- 1/2 cup sugar
- 1 egg
- 1 1/2 cups all-purpose flour
- 1/2 tsp baking soda
- 1/4 tsp baking powder
- 1/4 tsp salt
- 1 tsp cinnamon
Instructions
- Preheat oven to 350°F (175°C). Grease a muffin tin.
- In a bowl, mix grated zucchini, oil, sugar, and egg.
- In another bowl, combine flour, baking soda, baking powder, salt, and cinnamon.
- Add dry ingredients to wet ingredients. Stir until just combined.
- Fill muffin cups 2/3 full. Bake for 20-25 minutes or until a toothpick comes out clean.
- Cool for 5 minutes before serving.
Notes
- Squeeze excess moisture from zucchini before using.
- Add nuts or chocolate chips for extra flavor.
- Store in an airtight container for up to 3 days.
