Ingredients

- 1 lb Italian sausage
- 4 cups chicken broth
- 2 cups water
- 4 large potatoes, diced
- 1 bunch kale, chopped
- 1 onion, diced
- 2 cloves garlic, minced
- 1 cup heavy cream
- 1 tsp crushed red pepper
- Salt and pepper to taste
Instructions
- Brown the sausage in a large pot over medium heat.
- Add onions and garlic, cook until softened.
- Pour in chicken broth and water, bring to a boil.
- Add potatoes and simmer for 15 minutes.
- Stir in kale and cook for 5 minutes.
- Reduce heat, add heavy cream and seasonings.
- Simmer for 5 more minutes before serving.
Notes
- Use spicy Italian sausage for extra heat.
- Substitute kale with spinach if preferred.
- Soup thickens when refrigerated – add broth when reheating.
